Sunday Food Prep/Tip: Low Fat Frittata
Frittatas are one of my favorite meal prep options. They are easy to put together, a great source of protein and a quick option for breakfast, lunch or dinner. Bake one up on a Sunday afternoon and you are set for the week! I found this great recipe for a lower fat frittata (most of them have milk or cream and lots of cheese) so I tested it out for us! It was delicious!!!
A couple notes: (1) I used a larger shallot instead of an onion; (2) I used about ¼ cup of Parmesan and it was enough; (3) I like heat so the ½ teaspoon of red pepper flakes did not bother me but it is a generous amount so if you want it a little milder, reduce that measurement; (4) it will seem like you are using A LOT of spinach but go with it…it’s great at the end!
